Cabbage with Fennel Seeds
Cabbage is an excellent source of vitamins and minerals, although these tend to be left in the cooking liquid if boiled for too long. It’s therefore important to shred the cabbage and cook it for as little time as possible. This dish is amazingly simple and unbelievably tasty!
- 1 medium to large onion, sliced and separated into rings
- 1 Tabelspoon extra virgin olive oil
- 1/2 head shredded Napa or savoy cabbage
- 1 teaspoon fennel seeds
- 2 Tablespoons Chicken broth, chicken stock or water
- salt and pepper to taste
In a 4 quart dutch oven, cook onions in olive oil over medium heat for about 10 minutes or until tender. Add cabbage and fennel seeds, cook and stir 2 minutes. Add chicken broth, stock or water. Cook and stir 2 minutes more. Season to taste with salt and pepper.
